  1. Prepare the quinoa in the Instant Pot
  2. In a medium saucepan over medium heat, stir together the shredded jackfruit and BBQ sauce. Simmer for 10 minutes, stirring frequently.
  3. Place the jackfruit, coleslaw, and prepared quinoa in meal prep containers.
  4. Refrigerate and enjoy throughout the week!
