  Spaghetti squash is pale yellow with a hard, smooth skin and rounded shape.  You can find this squash available in early fall through winter although most grocers have them available year round. When cooked, the flesh separates like strings of spaghetti. Because each serving is low in calories, fat, sodium and carbohydrates, it’s a great substitute for pasta and great way to add one to two servings of vegetables to your daily recommendation.
