Why should I eat DARK green and orange vegetables?


Eating vegetables that are dark green in their raw and cooked state (leafy greens, peas, Brussels sprouts, etc.) are typically rich in folate which is important for blood health and preventing birth defects. They are usually rich in vitamin A as well. Although it is important to eat a variety of fruits and vegetables, encouraging people to eat at least one dark green vegetable a day is an easy way for individuals to get folate and other important vitamins and minerals.
