Who doesn’t love a good taco? It’s the simple weeknight meal that’s always a winner! Here’s my theory: Tacos keep you coming back because they provide a blank canvas for exciting colors and flavors. There’s the taco shell, a protein, and of course the toppings to take your tacos to the next level. You could make Taco Night every night of the week and never run out of new combinations!

The Challenge: Elevate your next Taco Tuesday by adding a new color or flavor to your plate with fruits and veggies.

But first, why does adding colorful fruits and veggies to my next Taco Night matter?

Eating the rainbow of fruits and vegetables not only makes your plate look gorgeous, but it also ensures that you’re providing your body with a wide range of important nutrients. In fact, there are specific nutrients that are associated with specific colors – called phytonutrients. For example, lycopene in blue and purple fruits and vegetables or carotenoids in orange and yellow ones. No color of fruit or vegetable is superior to another, but all are part of a nutrient-rich diet.

5 Fruit and Veggie Taco Topping Combos

Mango + Fresh Jalapeno

Vitamin C with a side of spice! The vivid green and orange will have you filling up your taco shells again and again. A little chopped cilantro and lime juice go miles in amplifying the sweet      and spicy flavor.

Pineapple + Red Onion

Both pineapple and red onion have a bite, making them the perfect pair to spice up your taco night. If you want to get fancy and impress your guests, try dusting your large pineapple chunks with chili powder and throw it on the grill before dicing it smaller. This combination tastes delicious with any protein, but pulled pork will really make these flavors shine!

Corn + Fresh Jalapeno + Avocado

If you think you’re seeing a sweet and spicy trend here, you’re not wrong. And there’s even a word for it – swicy! There’s something about how sweet foods, like corn, balance with the heat of spicy peppers. And avocados round out these flavors with a serving of healthy fats! Take this classic to the next level by turning it into a Mexican Street Corn Salad to use as a taco topper.

Greens + Radishes

Iceberg lettuce is a go-to taco night staple, but have you considered any other greens? Spinach, kale, arugula, and other leafy greens add texture and flavor to each bite. For an additional snappy texture and peppery flavor, chop radishes into bite-size chunks and add them to the mix!
