Roasted Carrots

Preparation Time: 30 minutes or less
  • 1 package (16 oz.) baby carrots
  • 1 small onion, cut into thin wedges
  • 1 1/2 tsp. olive or vegetable oil
  • 1 Tbs. parsley, fresh, chopped
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
Preheat oven to 450 degrees. Coat a 9 x 13-inch baking dish with cooking spray. In the baking dish, toss together carrots, onion, and oil. Spread to make a single layer. Roast, stirring occasionally, for 20 to 25 minutes, or until the carrots are lightly browned and just tender. Add parsley, salt, and pepper; toss to coat.
