A Labor Day Celebration Simplified

It’s hard to believe, but this coming weekend marks the unofficial end of the summer season.  If you’re one of the many folks planning to celebrate the long Labor Day weekend with a picnic, barbeque, or pool party, I’ve pulled together a few recipes that are easy to prepare and delicious.
Watermelon Feta Blueberry Salad is a simple, yet refreshing side dish that your guests will love.  Combine cubed watermelon, blueberries, crumbled feta, and chopped mint in a bowl.  Whisk together lime juice, honey, olive oil, and sea salt, then drizzle over the fruit mixture and serve immediately.

Mexican Shrimp Cobb Salad is a layered, lighter version of the traditional recipe.  You’ll create a black bean mixture by combing black beans, corn, red onion, cilantro, lime juice, and salt.  Layer romaine lettuce, the black bean mixture, diced tomatoes, diced cucumbers, diced avocado, shredded cheese, and top with steamed shrimp.

Grilled Peaches and Cream are the ideal end of summer dessert.  After brushing halved peaches with oil, place on the grill for 5 minutes.  Turn over and drizzle with a bit of honey.  Place a dollop of cream cheese spread with honey and nuts where the pit was and grill for 3 more minutes until the filling is warm. Serve immediately.
