Preparation Time: 30 minutes or less
  • 1/4 cup fat-free herb vinaigrette
  • 2 oz. frozen orange juice concentrate, thawed
  • 4 cups shredded cabbage
  • 2 oranges, sectioned
  • 1 small red apple, halved, cored, and sliced
  • 1 cup (6 oz.) dried plums, pitted, and quartered
  • 1/2 cup (1 medium stalk) celery, sliced
  • 1/4 cup scallions, sliced
  • black pepper, freshly ground (optional)
In a large bowl, whisk together the vinaigrette and orange juice concentrate until blended. Add the cabbage, oranges, apple, dried plums, celery, and scallions, tossing to evenly coat. Season to taste with pepper, if desired.
