Casaba Melon and Cucumber Salsa

Preparation Time: 20 minutes
  • 2 cups ripe Casaba melon, diced in small pieces
  • 2 small cucumbers, peeled, seeded and diced
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and finely minced
  • ¼ teaspoon salt
Place all ingredients in a bowl and stir gently to mix.
