Poor diet quality, including suboptimal consumption of fruits and vegetables, continues to be a public health concern in the United States and elsewhere. A major factor for this situation is the perception that healthy foods lack flavor. However, scientific evidence is accumulating that shows spices and herbs can increase the acceptability and/or intake of such foods under controlled and free-living conditions without the addition of meaningful amounts of sugar, saturated fat or sodium, and the 2020-2025 Dietary Guidelines for Americans recommend spices and herbs for this purpose.
