Roasted red cabbage and goat cheese, oh my! Transform your cabbage and create this perfect side dish in only 15 minutes.
- Preheat oven to 400◦. Slice red cabbage into ½-inch-thick slices, cut from a whole cabbage. Place cabbage “steaks” on parchment-lined baking sheet. Brush or mist sliced cabbage with extra virgin olive oil, season with sea salt and pepper. Bake for 15 minutes until cabbage is nicely wilted.
- Once the cabbage is cooked, transfer to the serving dish. Drizzle with aged balsamic vinegar and finish with crumbled goat cheese and garnish with parsley to serve.
