This Pesto Chickpea Salad is quick, colorful, and the perfect anytime meal and BBQ addition!


For the Pesto:

  1. To a food processor, add basil, olive oil, and dry seasonings and pulse until you reach desired consistency.

For the Salad:

  1. Add additional olive oil, as needed, to thin; set aside.
  2. Add diced vegetables and mozzarella to a large mixing bowl along with pesto. Toss until well mixed.
  3. Serve immediately.
