Garlic-Lime Cocktail Peanuts

Prep Time: 10 minsServings: 1½ cups


Heat the peanuts in a small skillet over medium-high. Toss the nuts around the pan to heat evenly, for about 1 minute, or until you begin to smell the peanut aroma. Stir in the olive oil, lime juice, and lime zest. Continue to cook until the nuts begin to brown, about 1 minute more. Remove the pan from the heat.
Stir in the garlic powder and sea salt. Turn the nuts out onto a baking sheet, and spread in a single layer. Allow to cool before serving.
