Chilled Carrot Dill Salad

Carrots, shallots and dill create a crisp and refreshing salad that's perfect for summer. It's light enough to enjoy for lunch and plates elegantly as a side dish for supper.


Parboil carrots until tender yet crisp, about 2 minutes. Rinse under cold water and drain. Combine carrots and onions.


Mix remaining ingredients in small bowl until well blended.


Pour over carrot-onion mixture and toss well. Refrigerate for at least 3 hours to blend flavors.
