Celery Stuffed with Apricot Blue Cheese Spread

Instructions

Food Processor Method

  1. Place all ingredients in food processor. Pulse just until fruit and nuts are chopped.
  2. Refrigerate spread until ready for use.
  3. Slice celery stalks into 3- to 4-inch sticks.
  4. Fill celery pieces with spread.

Alternate Method Without Food Processor

  1. Chop dried figs and pecans.
  2. With a fork and hand mixer, mix blue cheese, cream cheese, and yogurt until smooth. Stir in chopped dried fruit and pecans.
  3. Refrigerate spread until ready for use.
  4. Slice celery stalks into 3- to 4-inch sticks. Fill celery pieces with spread.
