Select firm, straight, smooth stalks with tightly-closed tips. The stalks should not be limp or dry at the cut. Choose stalks of uniform thickness.
Refrigerate asparagus by wrapping ends of stalks in a wet paper towel and placing in a plastic bag. Store for up to 4 days.
