Select melons with a rich, golden-pink flesh. The skin should be golden and have a waxy texture. The fruit produces a rich melon aroma at the peak of ripeness. The rind should be soft at the large end. Avoid melons with blemishes or bruises or melons that are extremely green-colored.
Whole melons can be stored at room temperature for up to 2 weeks. Store cut melons at 45° F for up to 5 days.
