The beets should be crisp and firm to the touch. Look for those with smooth skin free of cuts and soft spots.

Fat free and cholesterol free. Excellent source of fiber and a good source of vitamin C 


Store in a plastic bag in refrigerator up to 2 weeks for beets without tops (greens), or 1 week for beets with tops.
