Preparation Time: 20 minutes
Salad

  • 1 1/2 cups vegetable broth or water
  • 1 1/2 cups couscous
  • 2 cups (1 1/4 pounds) sweet cherries, pitted
  • 1 16-oz. can black beans, rinsed and drained
  • 1 12-oz. can whole kernel corn, drained
  • 1/2 cup (3) scallions, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup green bell pepper, chopped

Dressing

  • 1/2 teaspoon lime zest, finely grated
  • 1/4 cup (2) lime juice, fresh
  • 3 tablespoons olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano, crushed
  • 1/4 teaspoon chili powder
To make the salad:
In a medium saucepan, bring the vegetable broth to a boil over medium-high heat. Stir in the couscous; cover and remove from the heat. Let stand for 5 minutes, then fluff with a fork. Transfer the couscous to a serving bowl and stir in the cherries, black beans, corn, scallions, parsley, and bell pepper.

To make the dressing:
In a small bowl, whisk together the lime zest and the remaining ingredients until well blended. Drizzle the dressing over the couscous mixture and toss until evenly coated. Serve warm or at room temperature.
